CRAIG'S TASTING NOTES
COLOUR: mid amber
NOSE: rich and fruity, toffee and caramel, some stewed fruit (plums, apricots), some chocolate, some brandy snaps and whipped cream, the tawny character grows but doesn’t dominate. Spirit is refined
PALATE: syrupy mouthfeel; spirit more forward and the grapiness of the tawny cask takes centre stage. Warming and fruity rich and rounded.
FINISH: fruity and tannins, some wood astringency. Herbs and nuttiness. Sour plums/cherries and the nuttiness linger.
PAUL'S TASTING NOTES
NOSE: Fruity nose with over-ripe mango and banana, dried apricot, delicate lime. Hint of high cacao bitter chocolate. Hazelnut nougat. Wonderfully balanced.
PALATE: Mango, unripe green apple balance well with the spirit. Slight rancio and delicate shiitake mushroom on the mid-back palate.
FINISH: Slightly drying with some oak and nuts and the slightest hint of umami in a lingering but gentle finish.
VIANO'S TASTING NOTES
NOSE: Fruity, with a compote of peach, fig and nectarine. Dark chocolate.
PALATE: Apple, crisp pear, mushroom, dried apricot; balanced and rich.
FINISH: The wood tannins sharpen the ensemble of sweet fruits, nuts and cacao and bring them to a long, lingering conclusion.
INDEPENDENT TASTING NOTES (ANGUS SMITH)
NOSE: Dried fruits in the vein of dates, figs and mild blackcurrant with a soft hint of flinty struck match which blew off after the first 5 minutes or so. Continues with an understated maltiness before golden syrup, demerara and roasted cacao nib Maillard tones blossom with further time in the glass.
PALATE: Great balance of malt, oak and tawny. More dried fruits and nutty, caramel sweetness with some gentle furniture polish, then creamy vanilla and coconut lactones kick in. On the swallow the oak billows kitchen spices through retronasal and into the finish.

CRAIG'S TASTING NOTES
COLOUR: mid amber
NOSE: starts a little subdued and austere; medium dry sherry, autumn leaves, dried sultanas and a hint of raisins. Fruit leather. Fruit and nut mix. The spirit is subtle.
PALATE: spirit more forward with cherry, sherry and woody herbs (menthol/thyme/mint) dried fruit, drying tannins.
FINISH: sherry notes abound, drying wood, roasted nuts, almond skins some syrupy reduction.
PAUL'S TASTING NOTES
NOSE: Damp forest floor overlying a base of dried mixed fruits dominated by orange peel and raisins. Slightly herby with a touch of umami – buttered button mushroom. Ambrosial with a sprinkling of demerara sugar sweetness.
PALATE: Herbaceous, minty and spicy with background dried fruit mix.
FINISH: Buttery, fruit lollies, cherry drops, lingering mint.
VIANO'S TASTING NOTES
NOSE: sherry, damp leaf litter, sultanas, vino cotto,
PALATE: Black cherry, fruit mince, hint of balsamic
FINISH: sharp finish of wood tannins early on, with walnuts, sichuan pepper and lingering balsamic sweetness at the end.
INDEPENDENT TASTING NOTES (ANGUS SMITH)
NOSE: Sultanas and red wine reduction with perhaps a smidge of aromatic sun dried tomato. Also opens up with moderate pencil shavings before a slightly musty crushed leaf, damp earth, vegetal coffee and green capsicum pyrazine twist appears.
PALATE: More dried fruit and vinous sweetness with some mushroom umami/rancio characteristics adding to the earthy, mulchy and vegetal pyrazine tones. Sweet and floral honeys through the finish with some clove and warm sawdust on retronasal.

CRAIG'S TASTING NOTES
COLOUR: mid amber
NOSE: Toffee, jersey caramels, honeycomb, honey icecream, the medium dry sherry notes make an appearance later.
PALATE: syrupy with more sherry bite than in the nose, drier and woodier, the almond skins and nutty tannins kick in. Leafy astringency in the back palate.
FINISH: autumn leaves and nutty tannins. The fruitiness up front has surrendered to the drier characters of the apera cask.
PAUL'S TASTING NOTES
NOSE: Gooseberry compote, anise, fudge and a slight hint of ginger. Fruit lollies develop over time.
PALATE: Dried apricot, Chinese five spice
FINISH: Lingering, the alcohol subsides slowly to a gentle fruit finish, but becoming ever so slightly bitter and tannic, but not unpleasantly so. Fruit returns at the end for a pleasant finish along with the shiitake mushroom, reminiscent of an autumnal damp forest.
VIANO'S TASTING NOTES
NOSE: Fudge, five spice, honey, butterscotch, yellow peach, crisp green pear
PALATE: Gentle hints of nutmeg and cinnamon, butterscotch sweetness with a honeyed edge
FINISH: Lingering, dried figs, with gentle white pepper
INDEPENDENT TASTING NOTES (ANGUS SMITH)
NOSE: Shares some of the tomato and earthy/coffee notes from his mother while bolstered by his father's dried fruit sweetness. Perhaps a little synergistic tobacco leaf and clove lead spice in the mix too.
PALATE: Good balance of mildly caramelised sweetness and rose florals with a touch of Yoko's vinous and earthy qualities playing as a counterbalance. The florals continue with a moderately perfumed retronasal tinged with a little more tobacco and freshly shaved oak.
SITH 2025 Commemorative Release
The 3Souls were proud to be one of the 18 producers featured at the inaugural Stills in the Hills Festival, which was held on Sunday 8 June 2025 at the Tin Shed Distillery, Nairne SA.
Each of the producers was invited to release a commemorative bottling, unique to the event, limited to 22 bottles. At the conclusion of the event, one lucky attendee won the complete set of exclusive festival releases.

CRAIG’S TASTING NOTES
COLOUR: Golden Amber
NOSE: stewed apricots, dried apples, honeycomb, honey on toast, toasty oak, butter menthols.
PALATE: syrupy and silky, honey and spice, nice rounded mouthfeel.
FINISH: warming, slightly dry and slightly peppery. Good dry tannins.
BALANCE: surprisingly very good as conventional wisdom suggests you’d expect the wood to take over, but the wood hasn’t dominated either the malt or the spirit.
PAUL’S TASTING NOTES
APPEARANCE: Golden Amber.
NOSE: Rich honey, crunchie bar, vanilla with lime topping and a hint of sweet oak.
TASTE: A sweet and sour melange, with the honey being balanced by a slight bitterness increasing towards the finish.
FINISH: A slight astringency, but the sweetness hangs on with a burnt toffee note.
STYLE: A big sugar daddy that would sit well as an after dinner malt.
VIANO’S TASTING NOTES
COLOUR: Golden Amber
NOSE: sweet honeycomb, salty licorice, hints of tobacco
PALATE: sugary sweetness at the start with pepper and spice thrown into the mix
FINISH: sharply tannic with a fruity sweetness that lingers and brings harmony
BALANCE: after dinner for me, but just as pleasant as an aperitif

COLOUR: Dark Golden Brown
NOSE: Ferny and minty, peppermint, cherries and red berries, some menthol.
PALATE: Fruity and minty, nice mouthfeel with some late spice.
FINISH: syrupy kick then drying tannins. Fruity notes and jam on toast hang around
BALANCE: Fruity and woody in a nice way; typical of the distillery.
PAUL’S TASTING NOTES
APPEARANCE: Dark Gold.
NOSE: Sweet citrusy esters and rich honey over sugared biscuit.
TASTE: Glazed candied orange with rich creamy dark chocolate. Fruity with plums, orange and peach, and a hint of muscovado sugars.
FINISH: Sweet plums with a nice lingering spiciness.
STYLE: A late afternoon pre-dinner warm-up to get the taste buds excited.
VIANO’S TASTING NOTES
COLOUR: Dark Golden Brown
NOSE: brown sugar, toffee, orange zest
PALATE: Christmas cake, glace fruits, chocolate, with dark sugar underneath it all
FINISH: candied plums with a spicy tail
BALANCE: a perfectly sweet finish to a festive occasion

Inaugural Tasting Australia Spirit Awards 2016: BRONZE MEDAL
CRAIG’S TASTING NOTES
COLOUR: Golden Amber
NOSE: Rich toffee, forest floor, shellac, fruit cake then the eucalyptus honey kicks in with some sour fruits, dried pears. Gets some woody herbs and the wine notes emerge.
PALATE: rich, warm, toasted nuts, a hint of wine gums, more of the eucalyptus and honey.
FINISH: Chestnut tannins kick in and the alcohol, warming even tingly.
BALANCE: Nice and syrupy, the alcohol never gets out of control; a quality spirit in an experimental cask.
PAUL’S TASTING NOTES
APPEARANCE: Golden Amber.
NOSE: Pleasantly reserved but sophisticated nose that opens up with time with red liquorice and subtle citrus.
TASTE: A very slight bitterness and sweetness underlies the malt, neither of which overpower. Some citrusy esters develop.
FINISH: Drying finish but with a lingering toffee note.
STYLE: A nice aperitif or a late nightcap, but make sure you don’t get tempted to keep going back for more.
VIANO’S TASTING NOTES
COLOUR: Golden Amber
NOSE: dark chocolate, citrus, with a hint of cloves
PALATE: sugar and spice and all things nice
FINISH: the balance of sweet sugars belies the alcoholic heat
